Just like how the skyline can indicate what the builders cared about, this text can give us some indication of what Socrates cared about. I believe that Socrates was concerned with human decision making, and thinking for oneself. Throughout the conversation between Euthyphro and Socrates, Socrates continually asks Euthyphro to explain his points of view, not just give examples of it.
Euthyphro claims to be a very wise man when it comes to the gods and other religious issues, but Socrates questions him to see if he can explain what he is talking about. This shows that Socrates cares about whether or not people completely understand things they hold to be truths.
This is just like the things we talk about in CIE class. We are asked about our views on something, but then we are asked WHY. This compels us to think and question what we believe so that we are better able to define ourselves. So in a way, Socrates is conducting a CIE class with Euthyphro; because Socrates cares about how Euthyphro, if not people in general, can think, make decisions, and then explain themselves.
